I am told that the '63 GP that I just purchased, has a little over 20,000 original miles. Can anyone here point in the right direction as to what I should look for to indicate that the car has 20,000 original miles and not 120,000 miles?

Remember, it could have anything between 20,000 and 120,000 too. Many speedos were "turned back" or even the heads replaced over the years.
Some obvious things to check are wear-and-tear items. Carpet and upholstery will look quite different between that mileage range. Also, the brake pedal corner (lower left- as I drive an automatic, with two feet; lower right for others who drive the "right" way) will not be rounded off in just 20k, but probably considerably so in 120k.
Beyond an owner's statement (preferably the original one's), only records kept showing serving and repairs could bee proof.
That old of a car, in very nice shape, probably wouldn't be any more valuable at 20k miles than 120k anyway. Remember, even 120k is only just over 2,000 per year anyway.
